Chef Skip was born and raised in Wisconsin. He started in the restaurant business at an early age as a steward and worked his way through the ranks to Executive Chef of the Racine, Wisconsin Marriott Hotel, managed by New Castle Hotels & Resorts. Through his 28 year career with New Castle, Chef Skip has worked at four of their New York properties, Montauk, Smithtown, Alexandria Bay and Syracuse, as well as Portland, Maine, Ypsilanti, Michigan and currently Jekyll Island, Georgia. Each property has been between 100 and 350 rooms with à la carte restaurants and catering facilities to feed up to 1,000 people.
Skip says….”A big part of my journey, by far, has been the people I have worked with. The people in the hotel industry are the heart and soul of each property and each department. Without them and the experiences they bring, we cannot do what we do every day. This journey has been a never-ending learning experience. Each property is different on many levels, which adds to the excitement of each new challenge and adventure.”
