An upscale Casual concept created by Chef Kenny & Anna Gilbert, highlighting Chef Kenny’s Signature Fried Chicken, Biscuits and Champagne Cocktails. We will be highlighting Daily Specials focusing on International Chicken Dishes.

Since the pandemic hit the world by storm in March of 2020, Chef Kenny has been cooking for his community during a very challenging time. During this period, he has served up creative comforting dishes from around the world to not only provide nourishment but also to provide cuisines missing in his area of Springfield, a suburb of Jacksonville Florida.

Located near downtown Jacksonville, in Historic Springfield, Silkie’s is the perfect warm and friendly restaurant, that will provide a safe friendly environment featuring delicious food that everyone will enjoy.

Chef Kenny’s signature “ Flavor Bomb” is comprised of Smokey Fried Chicken Thigh served on Truffle Gouda Drop Biscuits, Fernandina Beach Hot Sauce + Orange Blossom Honey is a dish that dreams are made of. Crispy & Smokey with the option of spice and sweet is heavenly.

Silkie’s will feature Four types of Fresh Baked Drop Biscuits. These will be offered as a combo served with options of varieties of Whipped Butter, House Pickles and Jams. Buy as a pack of 4 or individually.

Next you can enjoy variations of Chicken & Biscuit Sandwiches served individually or as a combo served with a choice of two sides and soft drink. We will have 8 sides to chose from with options that are Vegetarian and Gluten Free.

Creative Starters like Blistered Shishito Peppers & Cauliflower served with Champagne Vinegar Dressing, Pickled Mustard Seeds and Maldon Sea Salt will be a great Plant Based Starter to enjoy. Daily specials will be created providing international dishes that are missing in the community.

We will highlight dishes from around the world. Chef Kenny feels that as we learn we teach and as we teach we learn! Food is the best way for us to come together. Our Specialty selections will feature Chef Kenny’s love for different international Chicken dishes that he has learned to prepare through his travels and work experiences around the world. Dishes like, Filipino Chicken Wing Adobo and Indian Chicken Tikka Masala just to name a few.

Sides will feature several starch, vegetable and fruit combinations that are Gluten Free and Vegetarian. Items like Truffle Gouda Mac and Cheese, Silkie’s Potato Salad, Congaree & Penn Jupiter Brown Rice + Red Quinoa. Artisan Greens Salad, Green Beans and Turnips, Tomatoes + Cucumber Salad + Radish. Followed up by a delicious Watermelon & Lychee Fruit Salad.

There will be a display case showcasing Mini Fresh Pies, Cakes and Cobblers with the option served with Vanilla Ice Cream.

We will offer a creative Champagne/Sparkling Wine Cocktail Menu. Creative pre-mixed mixers to pair up with the Split Bottles that we will have on hand. For example “The Girls Night Out”, will feature Pear Nectar, Wine Based Gin, Orange, Lemon and Simple Syrup that will be the perfect mixer to enjoy over ice or paired with your choice of Champagne/Sparkling Wine. We like to think of this a Mimosa on level 10!

There will also be a nice selection of wines, craft beers, Coca Cola Brand Sodas and soft drinks including a Kool Aid of the day as well as Fresh Lemonade, Tea and Coffee.

Current Top 40 Hits will play in the background. You will hear your favorite artists at some point during your time with us in an upbeat fun environment.

Warm soft colors are throughout the space, with exposed brick and high ceilings. Warm tan colors paired with images of different types of Chickens will accent the walls creating a unique look while providing education for all.

The outside Bamboo Zen Garden patio is a unique feature with brick pavers that provides a warm and friendly vibe.

Off Premise catering will be offered featuring all menu items as well as custom menu options to accommodate anyone’s request.

All food will be served in accordance to CDC standards in quality to go containers, covered and delivered with care to ensure safety in socially distancing standards.
